The Recipe for Lampredotto with Artichokes
Ingredients:
- Garlic
- Parsley
- Fresh artichokes
- Precooked lampredotto (available at our stalls)
- White wine
- Tomato sauce
- Tomato paste
- Salt
- Black pepper
- Extra virgin olive oil
Instructions:
- Prepare the artichokes: Start by cleaning the artichokes thoroughly, removing the tougher outer leaves and the internal choke. Cut them into wedges and immerse them in water with a bit of lemon juice to prevent them from browning.
- Sauté the base: In a large pot, heat extra virgin olive oil and add chopped garlic and parsley. Sauté for a few minutes, being careful not to burn the garlic.
- Cook the lampredotto: Add the precooked lampredotto, cut into strips, to the pot and let it absorb the flavors of the sauté for about 10-15 minutes.
- Add the artichokes: Add the artichokes to the pot, mixing well to combine the flavors. Deglaze with white wine and let the alcohol evaporate.
- Incorporate the tomatoes: Pour in the tomato sauce and add a tablespoon of tomato paste, stirring well to combine all the ingredients.
- Continue cooking: Cook over medium heat for about an hour and a half, adding a bit of broth if necessary. Season with salt and black pepper to taste.
- Serve: Once the artichokes are tender and well combined with the lampredotto, the dish is ready to be served. It’s perfect with some toasted Tuscan bread to soak up all the flavorful sauce.
