Bambi’s Summer Cartoccio – Lampredotto as it Once Was
“Perhaps the older ones will remember strolling through tripe shops with family. The aroma made your mouth water. The tripe maker would hand over a piece of tripe, and we’d eat it straight from the foil, with a toothpick in hand,” reminisces Giacomo Trapani.
Inspired by these memories, we created Bambi’s Summer Cartoccio. Enjoy la croce, the most succulent part of trippa, along with nervetti, musetto, paw (callus), poppa, and tongue. Roughly cut and seasoned with salt, pepper, and lemon, served in anti-grease paper. Add our green sauce and hot sauce for an authentic taste of the past!
