The most common preparation is undoubtedly stewed trippa, and here in Florence – alongside the king of our cuisine, lampredotto – we prepare it “alla fiorentina.” However, there is a less conventional but equally delicious way to enjoy this delicacy: fried trippa.

Ingredients for Fried Tripe

To prepare fried trippa, you’ll need:

  • Trippa (preferably pre-cooked and cut into strips)
  • Flour
  • Salt
  • Oil for frying (preferably seed oil)
  • Rosemary for seasoning

 

Preparation of Fried Tripe

To prepare fried trippa, follow these simple steps:

  1. Drying: First, thoroughly dry the trippa, ensuring it is not too wet but just slightly moist so that the flour adheres well without causing excessive splattering during frying.
  2. Coating in Flour: Pass the strips of cooked trippa through the flour, ensuring they are well coated.
  3. Frying: Heat the oil in a large pan – or even better, in a deep fryer – to about 160°C (320°F). When the oil is hot, fry the trippa in small batches until it is golden and crispy. Drain on paper towels, season with salt to taste, and if desired, add a few sprigs of rosemary for extra flavor.
