Galantina is a dish of French origin that, over time, spread to various parts of Europe, including Italy. Traditionally, it is a cold-cut preparation made from chicken or turkey, enriched with additional meats, eggs, spices, aromatic herbs, and, in its more refined versions, dried fruits or truffle.
In the 1960s in Italy, galantina was considered an ideal dish for special occasions, symbolizing elegance and culinary expertise. However, over time, it lost popularity, partly due to its complex preparation.
Galantina di musetto is a unique variation of the traditional galantina. Instead of being made with poultry, as in the classic French preparation, our version uses musetto di manzo – the beef snout – a flavorful and tender cut of offal. This particular choice enhances the dish with a rich texture and deep umami taste, making it a true delicacy.
Unlike traditional galantina, which is often served as a cold cut, our Galantina di Musetto is crafted into a fresh and vibrant salad, offering a completely new way to enjoy this time-honored dish.
